Its me hi!
I shared on instagram I felt like raising three teens feels like I'm running a Marathon, or should say endless game of whack a mole. I wouldn't change a thing. The chaos seems to keep me on my toes. Although, this week I haven't been on my game, I've messed up recipes, burned things, forgotten sports bags, cleats, emails. Perfect isn't this week. I'm finally okay with that.
The dance I'm trying to get better at is at weeknight cooking for a crowd. My growing teens seem to be eating us out of the house. Just when I thought I finally figured it out, my oldest seems to be in growth spurt, after spurt. He can almost devour an entire roast chicken, and then some. I guess that's what growing kids need??? This is my first rodeo so I honestly have no idea..
The only way I can outsmart them is by batch cooking over the weekend. I made a double batch of Bolognese, 2 roast chickens and veg instead of one, and lazy chicken soup to keep us fed all week. Also a whole salmon fish fillet from Costco, cooked with roasted veg, and boiled potatoes seems to be a win. And bellies full. I'm just thankful they eat fish.
Here are some things I'm cooking to keep me and my family of five going this week, and through an endless "busy season"..
Roast Chicken Dinner, x2.
Which you could cook in two dutch ovens, but I find one very large roasting pan works great, and fits 2 birds.
Lazy Chicken Soup ( click link and will give you the recipe) . This soup is so easy you can do it with your eyes closed. We have it going every week, and it’s easy to heat up, I like to make a side of bow tie pasta, or rice. I keep it seperate so it doesn’t soak up the broth. You can also use this as a base for bone broth.
3.“Boyfriend” Brunch- Sunday we were still eating well, everyone ravished ( again!) So we banned together and I made roast potatoes out of leftovers from night before, kids made the waffles. Eggs every which way, on this plate: Basically fried eggs, with turkey bacon, and yes “eggo waffles” for the win!
4.Double Batch Bolognese, we had our normal Sunday Sauce, but a much quicker version. I made it double batch so we can re -heat and have friday night with our “honeymoon” celebration. ( 17 years with my husband whoop whoop, more on that soon) recipe below and click link.
5. Chocolate Whiskey Cake- For a celebration.
As I just announced, my husband and I will be celebrating eons together and we both love molten chocolate cake, so win win.
